Tonight I made something new and exciting... stuffed peppers!
I had a huge bag filled with these small sweet peppers, orange, red, and yellow ones, and I needed to figure out something to do with them. I also had a package of polenta in the fridge that I had been wanting to use, but hadnt quite figured out how. Thats when the new recipe began.
Stuffed peppers (stuffed with polenta, chicken, sundried tomatoes, and rappi)
The filling was made with the following:
-Rappi blanched and then sauteed with garlic and sundried tomatoes
- chicken breast, cooked and then shredded
- polenta, sliced, fried and then mashed.
- salt, pepper, and thyme added to taste.
*once all the ingredients have cooled, proceed to mix them together using your hands.
For the peppers:
- capped off and cleaned out. Then I fried them in a pan to brown the outside. Once
cooled, stuff the peppers with the filling and bake at 450F for 15minutes.
Next time I make them I'll be sure to take a photo... I have a new camera charger heading my way soon! Then there will be pictures galore.
